What are we feeding you? Not Turkey. As a retired military/medical family we have celebrated holidays days, weeks, sometimes months off the date most of the world celebrates. Since many of you are going to have a traditional meal in the coming days we decided to go with what we are best known for, Neapolitan wood fired pizza, and our most popular appetizers, and desserts.
Why eat in your patrol car when you can sit and enjoy a nice meal with your fellow officers? The Realm 5602 S Washington St, Tacoma, WA 98409 has generously donated its venue for this event. The Realm is one of Tacoma’s premier venues and they look forward to having you as their guests. https://therealmvenue.com/ They have added 2 large televisions, and the game will be on!
The food will be buffet/family style so you can enjoy slices of many different pizzas, grab another drink when you are thirsty, etc.
Appetizers
Roman Pizza Bianca aka Garlic Bread
This iconic Roman dish is prepared the same way by us as it always has been in Rome. A hand tossed dough is cooked in the wood fired oven then painted with garlic butter and sprinkled with Meditarian sea salt.
Pulled Pork Sliders
Pork shoulder is braised on a bed of onions and apples in our wood fired oven with locally made, award winning Shilling Hard Cider, shredded and served on toasted slidder buns that have been painted with house made garlic butter. Customized your slider with house made pickled red onions, hot pickles, and or traditional pickles. Served with 3 sauces, house made South Carolina Mustard Vinegar sauce, a recipe from our time stationed at Fort Jackson, SC., Mango habanero sauce, or traditional BBQ sauce.
The Classics
MARGHERITA
The Neapolitan classic, "first" pizza. Prepared with fresh mozzarella, tomato sauce, fresh basil, a touch of Pecorino Romano, sea salt, fresh ground pepper, and a drizzle of extra virgin olive oil.
MARGHERONI
A family favorite spin on the pizza that started it all, and our oldest daughter's creation. A classic Margherita with our extra large pepperoni.
SIRIUS MARGHERITA/MARGHERONI
Adding shaved garlic is our favorite way to have the Margherita or Margheroni. Say Sirius and we will add shaved garlic.
MARINARA
The second most popular pizza in Naples, and it happens to be vegan and dairy-free. This is Holly's favorite pizza. Made with our sauce, shaved garlic, fresh basil, oregano, olive oil, Mediterranean sea salt, and freshly ground pepper.
The Favorites
CHARLIE
Our most popular pizza, invented by our son Charlie. It is made with our crema base, mozzarella, pepperoni, sausage, bacon, a touch of Pecorino Romano (aka fancy parmesan), sea salt, and fresh ground pepper.
FLAMMKUCHEN, a German delicacy
This southern German favorite starts with our hand stretched dough, our cream sauce, a bit of Swiss cheese, onions caramelized in a local dark beer, bacon, sea salt, and freshly ground pepper. Finished with diced green onions. Can be made vegetarian by leaving off the bacon and adding olives to replace the salty balance the bacon adds.
THE HECKER
Our own variation of Flammkuchen, but with sausage instead of bacon. Can't pick? You can do bacon and sausage.
The Acorn Special, aka Honey Pecan Bacon Pizza
This sweet treat is our family's favorite dessert pizza. The sweet of local honey, the rich and distinctive taste and texture of pecans with the salty counterpoint of bacon are held together with a dusting of Pecorino Romano cheese and mozzarella.
THE SCORCHER
Spicy sausage, sliced fresh jalapeno peppers, mozzarella, tomato sauce, and red pepper flake.
THE COCKRELL SPECIAL
Our Thursday night home is Cockrell Hard Cider. Their special is our pepperoni pizza with the addition of shaved garlic. It has become one of our most popular brewery pizzas.

Strawberry Shortcake Scones
A true Pacific Northwest classic with a nod to summer fun at the fair. Fluffy, golden scones are made from scratch on-site, then split in half. Strawberries are ladled on, their juicy sweetness soaking into the warm scone. A cloud of whipped cream crowns this timeless, impossible to resist treat.

We need to have a Sirius Conversation….
Say Sirius before the pizza name and we add shaved garlic.
Say Spicy before the name and we add jalapeños and red pepper flake.
Say Dirty and we add some char to the crust.
Say Blond and we will bake your crust less, leaving it a bit doughy instead of crisp.
Say White and we change it to a creme sauce instead of a tomato sauce
Say Red and we change it from a white sauce to a red sauce.
